To ensure the highest standard in food preparation and cooking is maintained. To train / develop the entire kitchen brigade.



  • To oversee a section of the Kitchen and ensure that it runs according to performance standards established by the Executive Chef.
  • To organize and set up the assigned section efficiently as possible to increase speed and maximize productivity.
  • To ensure that all items from that section are prepared consistently and according to standard product specifications.
  • To assist the Sous Chef in ensuring that all culinary standards in that section comply with company and Hotel Policies and Procedures and Minimum standards.
  • To monitor food and operating costs and control these by reducing waste.
  • To assist in maximizing employee morale and productivity.
  • To work in any section of the kitchen when necessary or as requested by the Sous Chef or Executive Chef.
  • To become familiar with all sections of the kitchen to facilitate the flexible use of employees.
  • Ensure that all fridges and/or freezers within the kitchen is kept tidy and organized at all times.
  • Ensure that stock rotation is being carried out properly.
  • Ensure all foods are properly cooked, tasted, stored and date stamped.
  • Ensure Section is kept tidy and clean at all times ensuring proper Food Standards are kept.
  • Regularly monitor core temperatures and HACCP procedures.
  • Ensure that the section is properly organized before service and clean and tidy after each service.



  • The position requires a minimum of three years’ experience in full-service hotels in a similar role and/or minimum of one year in a supervisory role.
  • Individual must have excellent written, presentation, oral communications and interpersonal skills in English. Individual must possess strong leadership skills, be able to motivate and influence others. Individual must be able to think creatively and strategically, have excellent judgment and be able to work in a changing environment.
