Job summary: We are looking for an Executive Sous Chef to join our team of passionate individuals in Meliá White House Hotel. As Executive Sous Chef you will ensure smooth running of the kitchen, maintaining the quality of product and service to all Food and Beverage outlets.

 

What will you be doing?

 

  • In the absence of the Executive Chef, represent the Kitchen on the hotel Executive Committee
  • Ensure the efficient and smooth operation of the Kitchen Division providing services and support to other Divisions as required
  • Ensure that all outlets are managed efficiently according to the established concept statements and adhere to Company and Hotel Policies and Procedures and Minimum Standards
  • Monitor service and Food and Beverage standards in all outlets
  • Ensure accurate maintenance of recipes, conversion recipes, yield tables and product specifications
  • Monitor and analyze the activities and trends of competitive restaurants, bars and other hotel’s banqueting departments
  • Assists with the preparation and regular update of the Food and Beverage Departmental Budget, in close cooperation with the Executive Chef ensuring targets are met and costs are effectively controlled
  • Delegate appropriately, duties and responsibilities to equipped and resourced employees, nurturing and developing them whilst ensuring standards of operation and safety are maintained
  • Develop and assist with training activities focused on improving skills and knowledge
