Guide, supervise and lead by example the bartender team to ensure smooth delivery of service to all guests.

Ensure Sequence of Service are being followed through with each guests from seat, to beverage and food order take through to payment. Will assist management in the development of all junior servers to understand and deliver each step of the SOS.




  • Prepare and serve alcoholic and non-alcoholic drinks consistent with our standardized drink recipes
  • To support Bartenders on maximizing revenue.
  • To ensure all guests feel comfortable and welcomed in a clean environment
  • To enhance guest experience through guest engagement.
  • Supervise bartender and barback.
  • Participate in departmental training sessions.
  • Actively support, guide and oversee new starter training.
  • Support management in service operations and training.
  • Communicate with managers of any guest complaints and work to ensure we recover guest satisfaction.
  • Record drink orders accurately and immediately after receipt into Point of Sale
  • Accept guest payment, process credit card charges and cash
  • Ensure glasswasher area is kept tide and clean at all time and glassware are cleaned properly
  • Responsible of the drink pass and ensure all the drinks are served in timely manner and up to standard following the recipe
  • Maintains bottles and glasses display in an attractive and functional manner to support efficient drink preparation and promotion of beverages
  • Clear and reset tables in bar area
  • Present drink menus, make recommendations and answer questions regarding beverages
  • Maintain cleanliness in all areas of the bar including counters, sinks, utensils, shelves and storage areas
  • Receive and serve food orders to guests seated at the bar
  • Report all equipment problems and bar maintenance issues to restaurant manager
  • Assist the restocking and replenishment of bar inventory and supplies
  • Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor
  • Maintain a high standard of knowledge in food and beverage
  • Maintain cleanliness in all areas, including counters, utensils, shelves and storage areas.
  • Supervise bartenders and barbacks
  • Maintain par sheets and par levels
  • Order and keep fruit / beverage requisition up to standard
  • Record wastage and training and control transfer between department
  • Maintain cocktail list and come up with new cocktail ideas
  • Assist with scheduling of the bartenders and barbacks
  • Do regular blind pour tests on the bartenders to ensure proper pours
  • Oversee bar organization and cleanliness
  • Check bartender and barback side work and deep cleaning assignments
  • This job description cannot be exhaustive due to the nature of the Hotel industry. On occasions, the jobholder may be required to carry out reasonable duties in their department or others areas of the hotel as specified by management.
