Accountabilities for Food & Beverage Controller

 

In this role, you will be expected to control Food & Beverage operations from a financial aspect. This will be achieved by working closely with the Food & Beverage (F&B) team to deliver accurate financial results, in a timely manner and reviewing internal control measures. To fully understand and perform your job accountabilities and personal competencies as described below.

Specific Job Accountabilities

  1. Produce Weekly Food & Beverage Forecasts and any additional forecast analysis when required
  2. Produce Monthly Profit & Loss Statements and review the Balance Sheet periodically
  3. Analyse the monthly P&L with the F&B Director, follow up, and provide areas of improvements in order to meet KPI’s where required against Budget or when advised by Senior Hotel Management / Cluster Business Controller.
  4. Monitor Food & Beverage Expenses, Cost of Sales and Payroll in all of the F&B Outlets and provide analysis and suggestions periodically. 
  5. Prepare annual budgets and Re-forecast exercises when required
  6. Assist any HOD’s / Outlet Managers in controlling expenses, cost control and reviewing the internal control measures.
  7. Assist with the menu changes from a financial aspect by costing menus, set prices and mark-ups for Food & Beverage Items.
  8. Daily monitoring of the Sales Mix, Voids, Promotions and any other F&B activities and ensure controls are in place.
  9. Performing other duties when requested from the F&B Director and the Cluster Business Controller or other members of the Senior Hotel Management team.
  10. Reviews and Supports the Back of House Team, from a purchasing and stock control aspect.
  11. Ensuring monthly stocktakes are conducted with integrity, which are verified, by conducting spot checks. 
  12. Responsible of controlling the procurement within the F&B outlets.
  13. Performs other duties as requested by the Director of Food & Beverage and Cluster Business Controller
  14. Attends hotel meetings such as department meetings and may conduct meetings as requested by the Director of Food & Beverage or Cluster Business Controller
  15. Complies with any requirements requested by the ‘The One Group’ including the reporting format of the P&L’s.
  16. Occasionally receiving deliveries and cross checking the delivery note with the items and following up with suppliers where appropriate
