I. MISSION:
A Director of Food & Beverage will direct the food and beverage operations of the hotel to ensure the achievement of established food and beverage quality and guest service quality standards and departmental revenue and profit goals. Ensure policy compliance, support the Company's initiatives, and promote a positive culture.
II. MAIN RESPONSIBILITIES:
- Provide a professional, advisory and executive support service to the General Manager to assist in meeting the strategic goals of the establishment.
- Develop and implement Food and Beverage promotions, strategies and special events in conjunction with the Executive Chef and the Director of Sales and Marketing.
- Coordinate the upkeep and cleanliness of all outlets by liaising with Housekeeping and Maintenance.
- Liaise with the Executive Chef on menu engineering and portion control, ensuring the highest food standard is achieved whilst selling at the correct prices.
- Maintain all equipment within the outlets eg. Menus, linen, china, glass, electrical equipment and Point of Sale system.
- Responsible for the checking of all stock, requisitions and equipment on a regular basis.
- Drive corporate or Hotel specific programs that affect guest satisfaction and profitability in the outlets.
- Implement control procedures to minimize errors, fraud and waste.
- Ensure that the property is seen as being the principle innovator in the market place.
- Coordinate Hotel wine lists, offering choice and variety as well as price consistency throughout the Outlets.
- Manager all entertainers in the property, ensuring quality standards are maintained.
- Handle Food and Beverage complaints in a timely and effective manner.
- Ensure correct liquor licensing laws are abided by, paying attention to intoxicated guests and underage guests.
- Prepare monthly outlook/forecast reports.
- Negotiate Food and Beverage contracts within corporate guidelines.
- Conduct development and performance reviews, identifying key personnel for further development and structured career pathing.
- Implement and maintain training systems to ensure that associates have the necessary framework and skills to perform their job efficiently and effectively.
- Prepare work schedules and annual leave schedules within budget, business expectations and guidelines of the appropriate industrial legislation.
- Participate in the preparation of the Strategic Business and Operating Plans.
- Attend meetings as required.
- Implement opportunities for quality Team Building.
- Ensure that all associate comply with the grooming and uniform standards.
- Oversee the selection and appointment of new associates with the department.
- Conduct regular staff meeting to keep all associates informed.
- Participate in the Hotel “Manager on Duty” program
- Ensure compliance with legislated health and safety requirements within the workplace
- Comply with all Corporate and Hotel Standards and Procedures
- Actively promote a work environment, which cares for guests and associates alike.

III. JOB REQUIREMENTS:
Bachelor’s Degree or Diploma in Hospitality, Food & Beverage, Culinary, or related field.
Good command of written and spoken English.
Strong knowledge of Food & Beverage operations, market trends, guest service standards, and financial management.
Minimum 3 years of experience in a similar position within an international 4-5 star hotel/resort environment.
Excellent leadership, communication, organizational, and team management skills.
