Position Overview:

As a Chef de Partie at Sol Tropikal Durrës – Meliá Hotels International, you will be responsible for overseeing a specific section of the kitchen, ensuring the preparation and presentation of high-quality dishes in line with the hotel's culinary standards. You will work closely with the Sous Chef and Head Chef to maintain consistency, efficiency, and hygiene in your designated station.

Key Responsibilities:

Food Preparation & Cooking:

  • Prepare, cook, and present dishes according to the hotel's menu and standards.
  • Ensure ingredients are fresh, properly stored, and used efficiently.
  • Maintain high levels of food quality, taste, and presentation in your station.
  • Monitor portion control and consistency of dishes.

Station Management:

  • Oversee and manage the kitchen section assigned (grill, sauté, pastry, etc.).
  • Coordinate with other chefs to ensure smooth kitchen operations.
  • Assist in menu development and suggest improvements based on expertise.
  • Maintain stock levels and communicate with the Head Chef for replenishments.

Hygiene & Safety Compliance:

  • Follow hygiene, sanitation, and safety regulations according to food safety standards.
  • Ensure all kitchen tools and equipment are maintained and used correctly.
  • Monitor proper food handling and storage to prevent waste and contamination.

Team Collaboration & Training:

  • Guide and train junior chefs and kitchen assistants.
  • Work as part of the team to ensure efficient service, especially during peak hours.
  • Communicate effectively with the Sous Chef and Head Chef regarding kitchen needs and challenges.

Requirements:

  • Proven experience as a Chef de Partie or similar role in a high-volume restaurant or hotel.
  • Strong knowledge of culinary techniques and kitchen operations.
  • Ability to handle high-pressure situations and work efficiently under tight deadlines.
  • Understanding of food safety and hygiene regulations.
  • Good communication and leadership skills.
  • Flexibility to work shifts, including weekends and holidays.
  • Culinary degree or equivalent certification is preferred.
