We are looking for Japanse Restaurant Chef - Gran Melia Jakarta

 

Mission:

As a Japanese Restaurant Chef, you will be responsible for planning and managing the day-to-day operations of the Japanese kitchen, and maintaining the highest standard of food. You will work closely with the Executive Chef and FB Director on developing the production of the high quality of food for the restaurant by taking into consideration of the latest trends in food presentation, nutrition value and seasonality and aim to achieve the highest guest’s satisfaction by attending to the guest complaints and requests. Ensure the storage and the food safety in compliance with HACCP and related safety standards as per the hotel standards by inspection in regular basis. Achieve excellence for the food production   brigade by training and coaching team members for continuous products consistency and enhancement

 

What will I have to do?
1.    Develop and execute a menu that showcases the essence of Japanese gastronomy.
2.    Prepare traditional and modern Japanese dishes with a focus on quality and authenticity.
3.    Source and select premium ingredients, including Japanese specialties.
4.    Train and mentor kitchen staff to uphold high culinary standards.
5.    Ensure consistency, food safety, and hygiene in all kitchen operations.
6.    Collaborate with the management team to create seasonal specials and events.
7.    Responsible for running, overseeing, and setting up the culinary operation
8.    Cost control, monitoring performance across the department
9.    Regular hygiene audits

 

What are we looking for?
1.    Proven experience as a Japanese Restaurant Chef or in a similar role within a premium restaurant or hotel
2.    In-depth knowledge of Japanese cuisine, including Sushi, Sashimi, Robata, Teppanyaki and Japanese Kitchen and regional specialties.
3.    Culinary degree or equivalent professional training is a plus.
4.    Creativity, attention to detail, and passion for excellence.
5.    Strong leadership and team management skills.
6.    Ability to work in a fast-paced environment while maintaining quality and efficiency.
7.    Preferably International Experience specially Experience within the Asian market
8.    Fluent in Japanese & English
