Mission:
Responsible for supervising their team, their uniforms, appropriate appearance and discipline, ensuring that they work efficiently and provide excellent service to guests and customers. Supports and assists the Maître-Restaurant Manager, ensuring that the service and food and beverage procedures and quality standards defined to satisfy guests and customers are met and promoting sales to increase revenue and achieve objectives.
Responsibilities:
• Awareness of the implementation of the methodology defined for bars. (products, orders, service standards)
• Awareness and monitoring of the products in bars in the hotel
• Bar menu planning (menu rotation)
• VIP procedures
• New F&B project tools
• Participates in the Daily Briefing to be aware of the situation in the department
• Participates in follow-up meetings for service order to ensure events occur as planned.
• Participates in monthly management meetings, providing updated departmental results
• Ensures the team is aware of the technical data for the different outlets
• Defines action and implementation plans for the hotel to propose products in hotel bars
• Reporting and monitoring - Revo
• Makes orders to hotel stores to ensure appropriate inventory levels depending on product rotation.
• Supplier management
• SAP Product Requests.
• Reviews and monitors maintenance activities in kitchen facilities.
• Responsible for the equipment and machinery in hotel restaurants and bars, coordinating the maintenance, decoration, cleaning and good condition of facilities. Checks replacements of tablecloths and cutlery in poor condition
• Coordinates cleaning of the work area and ensures the correct condition of dishes, cutlery, glasses, bottles and equipment in general
• Serves customers at the bar tables, prepares the drinks they order and makes suggestions about the menu
• Promotes products and makes suggestions to customers, designs an attractive menu depending on the season and the hotel brand and presents it to his immediate superior for approval.
• Stays up to date with regard to food products on the market and the preparation of cocktails. Ensures that beverages are prepared as indicated in the recipe book to ensure uniformity their proportions, appearance and flavours.
• Coordinates special bar set-ups for shows as agreed with the Activities Department.
• Responsible for compliance with all legal obligations in their area and attends any inspections that take place.
• Controls product consumption and the placing new orders.
Requirements:
• University degree, preferably Tourism or Hospitality, or similar
• At least 1-2 years’ experience in a similar position, in the sector
• Specific knowledge:
Knowledge of the F&B area, both the waiting service (restaurant) and the bar.
Knowledge of cashiers' closing and reconciliation, stock management, and ordering.
Knowledge of the latest bars trends.
Ability to ensure health and safety procedures (HACCP).
Cost control/ management.
Knowledge of REVO, and POS management.
Advanced command of the Office 365 package
Knowledge of hotel operations.
Ability to manage both the waiting and bar team, produce rotas, and ranks.
Ability to work in a team, service and quality oriented, professionalism, global and strategic vision and communication and influence as key competencies. Creativity and innovation.
• Languages: Fluent Vietnamese in both speaking & writing. Advance English. A third language will be highly valuable.
