We are looking for Executive Chef - Melia Serenity Cam Ranh (pre-opening)

 

Mission:

In charge of the Kitchen and reporting directly to the General Manager of the Hotel, the Executive chef will be Responsible for the implementation of strategy, standards, products and optimization of operational efficiency in the kitchen area for hotel.

 

Main responsibilities:

•    Implement the F&B strategy through standards based on product, qualities and culinary direction.
•    Is regularly available in the dining room to discuss any remarks made by guests
•    Organizes and supervises food preparations in line with the occupancy and consumption forecasts

•    Prepares the menus and à la carte choices
•    Uses an innovative and creative approach to producing and decorating dishes
•    Coordinates and supervises the preparation, presentation, timeliness of food products in all guest serving outlets to ensure the highest quality at all times
•    Keeps up-to-date with changes in culinary trends and monitors competitor F&B offers, quality etc.
•    Is actively involved in the local area to keep up-to-date with culinary trends and competition
•    Controls and analyses, on an on-going basis, in order to optimize the following:
o    Quality levels of product and service
o    Guest satisfaction
o    Operating costs
o    Sanitation and cleanliness (HACCP/ FSMS)
•    Ensure all food served are being closely monitor and governed by food safety measures and meet with the highest food hygiene standards, particularly HACCP standards
•    Optimizes sales by responding to guests' wishes, while respecting brand guidelines
•    Helps prepare the annual budgets for the department, analyses the results and implements any corrective actions as required
•    Promote the local gastronomy of the destination and incorporate local products. 
•    Promote healthy eating patterns for customers and employees.
•    Implement initiatives to promote the reduction of food waste 
•    Ensure the separation of waste generated in their area of responsibility
•    Ensure all food served are being closely monitor and governed by food safety measures and meet with the highest food hygiene standards
•    Coordinates with the Cost Controller to determine the minimum and maximum Food par stocks. 
 

Main requirements:

  • 3 years of previous experience in a similar position for 5* hotels International chain.
  • Fluent English in both speaking & writing
  • Outstanding organization skills, good understanding of food trends 
  • Strong leadership and team development skills.
