We are looking for Teppanyaki Chef – Villa Le Corail, A Gran Melia Hotel (Nha Trang)
Mission:
- Serve the needs of the business, our guests, and our colleagues by leading the overall kitchen operations of the hotel.
- Ensure that all guests at the Hotel are delighted by the quality, creativity and variety of our food and beverage offerings in every area of the hotel.
- Treat our guests and our colleagues with respect and work hard together to deliver the highest quality of service to all.
Main responsibilities:
- Develop new menus and food items to meet the taste and dining requirements of the guests. Maintain sensitivity to local cultural traditions and adhere to religious beliefs in preparation and services of all food on premises.
- Prepare and cook all teppanyaki dishes according to restaurant standards
- Ensure proper mise in place before service and maintain a clean, organized station
- Engage and interact with guests in an entertaining and professional manner during live cooking
- Ensure consistency in taste, presentation, and portion control
- Monitor stock levels and communicate with the Chef de Cuisine for requisitions
- Maintain hygiene and sanitation standards as per HACCP or internal guidelines
- Assist in developing new menu items or seasonal teppanyaki specials
- Train and guide junior staff or kitchen helpers assigned to the teppanyaki section
- Follow proper equipment handling and safety procedures
- Support kitchen team with general tasks as needed during low-traffic hours
- Implement procedures to minimize wastage and over-production.
- Ensure standards of presentation and preparation of food items meet hotel & brand standards
- Lead Task Force Missions on behalf of the hotel, to support the opening of new properties, and other special events catered by MELIA hotel International
- DEPARTMENTAL LEADERSHIP (with Executive Chef & Japanese Chef de Cuisine)
Ensure that Kitchen professionals are fully aware of hotel F&B strategy, and that their products meet these requirements
Direct and coordinate the daily activities of all the hotel’s kitchens.
Coach and guide new members of the team, putting in place proper orientation training and ongoing training and development for team members.
Manage relationships and contracts with suppliers.
Support and facilitate staff participation in local, national, and international competitions.
- HEALTH, HYGIENE & SAFETY
Maintain the highest standards of Food Hygiene, and adherence with all Health and Safety standards.
Report and take appropriate action to correct any health or safety hazard.
Check and ensure the proper storage of raw and processed food items including the condition of food in freezers.
Main requirements:
- Specialist Degree / Special Culinary Training
- Fluent in English, any additional language will be an advantage (better if it is the same where the hotel is based).
- 2-3 years in a similar position in large hotels or international companies.
