We are looking for Executive Chef - Sol Phu Quoc

 

Mission:

Organise and set up the Kitchen & Stewarding Department. In charge of the kitchen operation. Supervises the work of all kitchens & Stewarding employees. Sets and maintains all standards, assuring top quality products, directs the overall operation of food production, co-operates well with all kitchen outlets for smooth & efficient, operation, responsible  for  training  & implementing  Work Safety, Strict Food Safety & Hygiene  standards, elaboration and presentation of all foods contributing to the profitability of the Food & Beverage Department.

 

Main responsibilities:

 

  • To ensure culinary trends with innovative presentation, provide freshest products available, conduct daily briefings with all supervisors, follow up and enforce training plan. Schedule kitchen employees according to business needs. Maintain control of all food related expenses & food cost. 
  •  To coordinate the fulfilment of the work safety & training, maintain the highest food safety and hygiene standards ( HACCP ) at all times, implement new buffet design on regular base, and creating new culinary trends , Strive for the highest standards.
  • Manage Food and Beverages Cost efficiently in-line with the Budget as mandated by the company, ensuring efficient use of supplies and ingredients.
  • Achieving the Budget as mandated by the company every MTD and YTD.
  • Developing and planning food and beverages menus according to customers’ preferences and dietary requirements.
  • Managing Kitchen staffs, including hiring, training, and overseeing their work.
  • Ensuring the quality of beverages, food and presentation meet organizational brand standards.
  • Ensure compliance with sanitation and safety regulations.
  • Supervising beverages and food preparation as well as culinary activities, including cooking and presentations.
  • Estimating food requirements and coordinating cooking schedules.
  • Implementing and maintaining health and safety regulations in the kitchen and restaurant.
  • Working closely with other departments, such as marketing and operations, to promote the restaurant and its culinary offerings.
  • Manage relationships with vendors and suppliers.
  • Staying current with culinary trends and techniques and incorporating them into culinary offerings in the hotel.
  • Ensure a high level of customer satisfaction achieving the Online Reputation KPIs for Culinary Department.

 

Main requirements:

  • EDUCATION AND TRAINING: A Culinary degree from an international hotel school  or completed a formal western style Cooking  Apprenticeship Occupational training (or equivalent)
  • LANGUAGES: English - Good level, written & spoken
  • SPECIFIC KNOWLEDGE:    Plan & propose effective promotions Banqueting
  • Food cost control  
  • Unique Buffet set up, Presentation Concepts   
  • Great attitude with colleagues & customers
  • At least 5 years in international hotels in the same position.
