About the role:
Gran Meliá Jakarta seeks an experienced Restaurant General Manager to lead our signature Spanish restaurant. You will own daily operations, guest experience, commercial performance and team leadership to deliver an authentic Spanish dining concept and strong financial results.
Key responsibilities:
- Lead all outlet operations: service, bar, events, inventory, maintenance and standards.
- Own P&L and budget: set targets and deliver monthly revenue, food cost, labor cost, and profitability goals.
- Deliver KPIs: monthly covers, average check,, food cost, guest satisfaction (GSS) and online review targets.
- Ensure culinary and beverage authenticity: collaborate with Culinary Team to develop Spanish menu, wine/aperitif program and seasonal offerings.
- Drive commercial growth: menu engineering, dynamic pricing, upsell training, and yield management for peak/shoulder periods.
- Plan and execute events: private dining, chef’s tables, tasting menus, cultural nights, and high-value partnerships.
- Marketing & local partnerships: own outlet marketing plan with hotel Marketing & Sales — influencer outreach, PR, local Spanish community and embassy engagement, cross-promotions with luxury brands, and targeted digital campaigns.
- Guest experience & brand standards: ensure implementation of brand identity, sensory architecture and high-touch personalized service.
- People leadership: recruit, develop and retain outlet team; conduct reviews; and training.
- Compliance & safety: enforce HACCP, local food safety regulations, licensing and occupational health & safety.
- Sustainability: minimize food waste, increase local sourcing, and implement waste separation and sustainability initiatives.
- Reporting & systems: maintain accurate controls, use hotel systems and deliver timely reports to hotel leadership.
Requirements:
- Degree in Hospitality/Tourism or related field preferred.
- Minimum 5 years F&B leadership; 2+ years as outlet/restaurant GM for an upscale concept with P&L ownership.
- Proven success growing outlet revenue and managing KPIs (covers, average check, food & labor cost).
- Experience with Spanish cuisine or strong beverage program (wine/aperitifs) preferred.
- Languages: Bahasa Indonesia, English (advanced); Spanish desirable.
- Strong commercial, marketing and people-management skills.
- Knowledge of HACCP, local Jakarta food safety regulations, licensing and sustainability practices.
