Food & Beverage Manager – Melia Kuala Lumpur

We are seeking a dynamic Food & Beverage Manager to oversee the bars, restaurants, and banquet operations of our hotel. This role ensures excellence in operations, compliance with brand standards, and delivery of an exceptional guest experience

Key Responsibilities (include but are not limited to)

Operations & Strategy

- Implement F&B standards, operating manuals, and brand guidelines.

- Coordinate with the Operations Center (OC) to identify opportunities and execute initiatives.

- Supervise beverage and service offerings, ensuring consistency and quality.

Financial Management

- Ensure compliance with F&B budgets and KPIs.

- Monitor P&L performance, propose corrective actions, and drive results.

- Prepare investment budgets for equipment and productivity improvements.

Suppliers & Marketing

- Manage supplier requests and approvals in line with OC processes.

- Execute marketing campaigns and tactical actions as directed.

Human Resources

- Lead recruitment, onboarding, and training of F&B staff.

- Monitor staff presence, payroll, and compliance with HR policies.

- Promote wellness programs, staff development, and positive workplace climate.

- Ensure adherence to health, safety, and evacuation protocols.

Food Safety & Sustainability

- Guarantee compliance with HACCP and food safety regulations.

- Drive initiatives to reduce food waste and promote healthy eating.

- Oversee waste separation and sustainability practices.

Customer Experience

- Deliver personalized guest experiences aligned with brand philosophy.

- Anticipate guest needs, resolve incidents, and exceed expectations.

- Ensure team knowledge of hotel services, events, and entertainment.

- Uphold sensory architecture and Voice of the Customer standards.

What We’re Looking For

- Strong leadership and organizational skills.

- Proven experience in hotel F&B operations.

- Financial acumen with ability to manage budgets and investments.

- Commitment to food safety, sustainability, and guest satisfaction.

- Excellent communication and team management abilities.
